This quick fix is deeply-savoury yet balanced by a fragrant hit of herbs and spices for chopstick after chopstick of craveable flavours. The best part is you need just a handful of ingredients including Chef’s Choice @leekumkee.india’s Light & Dark Soy Sauce and Vegan Oyster Sauce, which forever remain my pantry staples! Recipe below serves 2-3 (depending on how hungry you are!) Cook 200-250 gm noodles of choice until just shy of al dente. Drain and set aside. Pour 3 tbsp of sesame oil to a small pan and add: - 3-4 cloves minced garlic - 1/2 onion, finely chopped - 2-3 tsp gochugaru/ chilli flakes Let it come to a gentle simmer for the flavours to fully infuse. Meanwhile, add the noodles to a large heat-proof bowl. Then add: - 3 tbsp light soy sauce - 1.5 tbsp dark soy sauce (or swap with 1 tbsp light soy sauce) - Splash of vegan oyster sauce @leekumkee.india - 1/4-1/3 cup chopped basil leaves - 1/4-1/3 cup chopped scallions - 1/4-1/4 cup finely chopped coriander - 2-3 tsp sesame seeds - Juice of 1 lime/ lemon Pour in the hot infused oil and let it sizzle. Then mix well until noodles are well combined with the spicy lemon-coriander sauce. Taste and adjust the flavours/ seasonings to preference (e.g. adding more lime juice for zing/ more vegan oyster sauce for a savoury depth). I use the Mutti Polpa and cherry tomatoes in this recipe for the most beautiful natural sweetness. Mutti really is the best tasting Italian tomatoes captured in a tin, that sits in my cupboards! I also add a spoonful of their Double Concentrate for richness and depth, it’s like giving your sauce a little extra love without needing hours cooking dishes down, such a dream collab @muttipomodorouk   SERVES 2 Under 550kcal, 32g protein per serving 1 tablespoon olive oil 3 garlic cloves, minced 2 shallots, finely chopped Pinch chilli flakes 1 red pepper, deseeded and diced 1/2 400g tin mutti cherry tomatoes 400g tin mutti polpa 150g uncooked weight orzo 1 tbsp mutti double concentrate 1 chicken stock cube 1 teaspoon dried oregano 60g spinach, roughly chopped Zest and juice of 1 lemon 200g raw prawns TO SERVE 80g feta cheese, crumbled Fresh dill and parsley leaves Heat the olive oil in a large pan over a medium heat.
