Quick Recipes for the Boys
Overview Made in one skillet and ready in under 30 minutes, this One-Pot Taco Pasta is an easy family dinner win. It has the comfort and flavors of both pasta and tacos, and it’s super versatile so you can tailor it to the preferences of your own family. Ingredients Ground beef: I like to start this recipe by browning ground beef. You can use any lean percentage you prefer, including 85%, 90%, and 95%. Onion: Adding in some onion with the beef adds nice flavor. I grate it on a box grater so it blends in, though you can also mince it with a knife. Crushed tomatoes: Adding Colavita crushed tomatoes adds flavor to the Taco Pasta. Garlic powder and cumin: These spices add the classic taco flavor, so we use them liberally in the mix. Pasta: I prefer to use a smaller pasta shape so it cooks easily and evenly in the sauce. You can use radiatore pasta, as shown here, or small shells or elbow macaroni. Broth: You can use beef broth, chicken broth, or Vegetable Broth in this recipe. Use reduced-sodium if desired. Black beans: I like to use Colavita black beans, drained and rinsed, to add a traditional taco element to this taco pasta. Sweet corn: You can use frozen sweet corn or canned sweet corn. If using canned sweet corn, drain it first. Shredded cheddar cheese: Cheese is stirred into the pasta to make the mixture creamy. It is slightly easier to have the cheese blend in if you grate it from a block, but you can also use shredded cheese from the store.
Ingredients Onion: You can use any type of onion here, though I usually go with either plain white ones or yellow onion. Carrot: I like to add veggies to this skillet dinner so I grate the carrot along with the onion so it cooks quickly and blends into the meat mixture. Ground beef: I use lean ground beef here so there is very little fat in the pan. You can also use ground turkey or ground chicken if you prefer. Ketchup and tomato paste: These two ingredients are both intensely flavorful and add the majority of the classic Sloppy Joe flavor. Oregano: I love the addition of oregano for even more flavor, especially since it’s not typically noticeable to kids who dislike flecks of green. Buns, pickles, as desired for serving
