I’m currently going through a pretty major life transition, which I’ll share more about in some upcoming posts. But the good news is that I’ll have a new kitchen soon, and I’m so excited to get back to cooking and sharing more recipes with you. In the meantime, I have a very easy and comforting recipe for you: Rice Cooker Gyudon! Gyudon is one of my favorite Japanese comfort foods. It’s made with thinly sliced beef and onions simmered in a sweet and savory sauce, then served over a bowl of rice. This version makes the entire meal right in the rice cooker. The rice cooks underneath while the onions soften and the beef cooks in a mixture of soy sauce, mirin, sake, and dashi. Everything comes together in one pot with very little active cooking. Subscribe Rice Cooker Gyudon Serves 2 Ingredients 1/2 onion, thinly sliced 2 tablespoons soy sauce 1 tablespoon mirin 1 tablespoon sake 1/2 teaspoon dashi powder 1/2 tablespoon sugar 1 cup short-grain rice 1 cup water Thinly sliced beef Sliced green onions, for serving Pickled ginger, for serving Instructions Slice the onion: Thinly slice 1/2 onion. Make the sauce: In a bowl, mix together the soy sauce, mirin, sake, dashi powder, and sugar. Marinate the beef: Add the thinly sliced beef to the sauce and toss to coat. Add the rice: Rinse the rice, then add it to your rice cooker with 1 cup of water. Layer: Add the thinly sliced onions over the rice, then top with the marinated beef and any remaining sauce. Cook: Close the rice cooker and cook using the regular white rice setting. Serve: Once cooked, divide into bowls and top with sliced green onions and pickled ginger. Tips: For the beef, look for very thinly sliced beef, like the kind used for shabu-shabu or sukiyaki. You can often find it at Japanese or other Asian grocery stores. Dashi powder adds the savory, umami flavor that makes gyudon taste like gyudon, while the mirin and sugar add just enough sweetness to balance the soy sauce.
