Cook the diced onion and carrot for about 5 minutes, until it softens.\n\nAdd the garlic and ginger and cook for 30 seconds. Chuck in the curry powder and turmeric and cook for a further minute.\n\nPour in the chicken stock and coconut milk. Bring it to the boil and reduce by half.\n\nUse a blender to blitz until smooth. Then add the soy sauce and honey.\n\nFor the chicken katsu:\nPlace the chicken breasts into a sandwich bag, or alternatively between folded up cling film. Use a tenderising hammer or a rolling pin to bash the chicken until it’s an even thickness all the way through.\n\nCoat the chicken in flour, beaten egg, and finally the panko breadcrumbs.\n\nShallow fry the chicken over a medium to high heat until it’s golden, crispy, and cooked through.\n\nSlice the chicken into strips and serve with rice and the curry sauce.","image":{"url":"https://ucarecdn.com/4d0a48d6-c782-4993-aaac-0611902e0402/","alt":"Chicken Katsu Curry - Chef Jon Watts","width":1200,"height":630},"stack":{"id":"04d5e110-3ed1-4a38-bee2-a14a019910fa","title":"Recipes","url":"https://stacklist.com/stack/04d5e110-3ed1-4a38-bee2-a14a019910fa"},"created_at":"2025-02-07T15:39:40.669Z","updated_at":null,"aco":{"summary":"This website is a food blog run by chef Jon Watts.
